A lot of what's sold as sourdough is a same-day shortcut — quick yeast doing slow fermentation's job. Real sourdough can't be rushed: ours ferments for a full 48 hours before it ever touches the grill. And straight-from-the-roaster coffee isn't ready to drink: ours rests for days — each coffee to its own clock — and isn't poured until it passes the tasting table. One standard, two clocks. We don't sell the in-between.
